Arcadia
Denomination of origin: Rosé wine.
Varietals: 80% Nebbiolo and 20% Freisa 20%.
Production zone: various vineyards within the municipality of Barbaresco.
The vineyards are east-facing.
Cultivation: the Guyot method is used and careful summer pruning of the bunches performed. We use integrated pest control, allowing a drastic reduction in the use of chemical treatments.
The harvest is late, between the end of September and beginning of October.
Vinification: red wine vinification is used with a short maceration on skins (24 to 48 hours) and fermentation in temperature-controlled stainless steel vats at not more than 19°C.
Ageing is in large stainless steel and vitrified concrete vats for three to four months, once vinification has ended.
Bottle ageing is for two to three months.
Alcohol content: 14,5%
Organoleptic characteristics: the wine is a bright cherry red in colour and possesses an intense and fruity bouquet with raspberries and red plums and, at the end, aromatic and musky notes. The flavour is fresh and slightly acidic and the wine is slightly sparkling. The aftertaste has a note of citrus fruits.
How to taste Arcadia: for a fragrant aperitif, serve cool (from 12°C to 14°C), or matched with salamis and cheese, together with pasta dishes, fish soup or red meat dishes, including steak tartare and sliced salt beef. When carefully stored, this wine is still at its best three years after harvesting.
